This is a meal in and of itself, and virtually cooks
itself! What you need is large baking potatoes, whole
onions, red or yellow, dill, parsley, olive oil, real
bacon bits, and butter.
Hold the potato and cut slices about half to three
quarters of the way through the potato; be sure the
potato stays together. Slice the onion, and put a
little olive oil and dill on each side of each slice.
Insert onion slices into potatoe slices, leaving top
part of onion exposed. Sprinkle on real bacon bits,
wrap entire potatoe in aluminum foil and bake for 45
minutes, testing for doneness by piercing with a fork.
The fork should lift out without lifting the potatoe.
Serve with a pat of butter and a few sprigs of parsley.
Add Tabasco to spice it up to taste!
