Cooking on an Open Fire

In days gone by, cooking over an open fire could be taken for granted.  Today, everyone is worried about air quality, fire hazards, and a bunch of other things that probably will never matter.  The freedom to experience cooking oven an open fire is a modern day blessing in a freezer pack deep fried world.

A clean burning hot wood based fire produces flavors you just cannot achieve on a gas stove or in an electric oven.  Flavor rich dried oak, pecan, and hickory woods provide amazing tastes not soon to be forgotten.  Asado cooking involves constantly moving embers from the firebox in the center of the center of the parrilla out towards the under side of the grilling areas.  Not many tools are used.  Cel Dor Asado has a couple of custom made rakes for moving embers about, and some tongs and tines for moving and turning meats and vegetables.

An asado is like the hearth in a living room, a gathering place for people.  An asado is like a campfire brought indoors with a tremendous grill.  The Latin name for hearth is ‘focus’.  Imagine that!  Truly, the asado, our hearth is the focus of your dining experience at Cel Dor Asado.
